Lazy Chiles Rellenos from page 24 of The Pioneer Woman Cooks Dinnertime by Ree Drummond.
This was a delicious breakfast casserole! Poblano peppers were charred on the grill then peeled and layered with Monterey Jack cheese in a casserole dish. A mixture of eggs and milk seasoned with cayenne and smoked paprika was poured over and baked for about 40 minutes. Served with bacon and a bowl of yogurt, blueberries, and peaches.
