My 225th recipe made in 2020: Instant Pot Cheesecake!
This recipe was a long time in the making.
I needed to order a springform pan that would fit in my Instant Pot.
Then I realized that getting the pan in and out of my Instant Pot would be almost impossible without a sling insert, so I ordered one of those.
Then I realized that the seal on my Instant Pot smelled very strongly of beans, curry, and chili. Not bad when making savory foods, but I did not want my cheesecake, or any other sweet things I might make, to smell savory so I ordered new sealing rings.
I finally had all of the tools I needed and could finally make my cheesecake!
IT WAS PERFECT!!!
It's small, only about 6 inches across, but makes 8 very filling slices.
Topped with fresh strawberries from our local berry stand.
This recipe was very quick to make and only required about 10-15 minutes of hands-on work.
The hardest part was staying patient as the cooked cheesecake was refrigerating for four hours!
