This is our favorite muffin recipe! My kids love these muffins and when they were little they wanted a name for them that better described their deliciousness. They came up with Supercalifragilisticexpialidocious Muffins. That was a little too hard to say, especially with a mouth full of muffin, so they shortened the name to Mouthful Muffins.
The recipe's real name is Mix-N-Match Quick Bread and is from my 1999 copy of Frozen Assets by Deborah Taylor-Hough. It is a basic quick bread/muffin recipe with several mix-in options for fresh, frozen, canned, or dried fruit and nuts. I have made versions of these muffins for years (decades) and have never had a bad combination. For this recipe I added 2 cups of fresh chopped strawberries.
Each muffins is 7 WW SP on the Purple Plan.
