BBQ-Stuffed Baked Sweet Potatoes

Dinner was planned and prepared by my 10-year-old daughter: 
from the March 2017 Cooking Light magazine. 
Delicious! Two thumbs up from all 6 of us! 
18 Weight Watchers Smart Points for the meal
but my potato was huge and extra cheese was involved. 
Follow the recipe and the point count will be much lower!
