Today I made Coconut Banana Bread with Lime Glaze from my Cooking Light Annual Recipes 2008 cookbook. I just got a new Bundt cake pan and decided to bake the bread in that instead of a loaf pan. There was just enough batter left over for 4 cupcakes. Mr. Coffee and I loved it, I even had some for breakfast. Can't be any worse than cinnamon rolls, right? Little boy was the only one who didn't like it but he also recently developed a sudden and unexpected aversion to bananas.
