Moroccan Chickpea-Stuffed Acorn Squash from page 74 of The Mediterranean Table by Weight Watchers.
This was a delicious side dish made with seasonal acorn squash from my local produce market. The squash is cut in half (I cut mine in the wrong direction but I really don't think it matters!), cleaned, and roasted. It is then stuffed with a sautéed and spiced mix of onions, chickpeas, raisins, and toasted sliced almonds. A delicious blend of flavors, sweetness, and crunch!
A filling side dish and only 4 WW points on my personal plan.
