French Onion Soup from the New Best Recipe cookbook by Cook's Illustrated.
America's Test Kitchen and Cook's Illustrated tried many techniques before they mastered this perfectly balanced recipe that cooks in about an hour. Red onions are caramelized and then simmered in chicken broth, beef broth, and wine. Individual portions are topped with slices of baguette, Swiss cheese, and a bit of grated Asiago. YUM!
